Keto Chicken Tenders

As I was making my weekly meal of Onion Chicken for the kids I figured out a way to make that recipe into a keto one for me. I started keto/low carb this week (will make a separate post for this) and am trying to figure out new ways of making certain dishes. So I was so happy when this one turned out tasting amazing. Now you have to like the flavor of pork rinds because I used them as my “breadcrumbs” and you can definitely taste that I used them. But oh man how good they are!! So without further ado, here is the recipe. Double or triple it, I only made enough for myself just in case they sucked.

Ingredients

  • 4 chicken tenders
  • Pork rinds (I used Goya, crushed them in the bag and used about half of the bag)
  • 1 tablespoon Paleo Baking Powder
  • 1 egg beaten (for egg wash)
  • 1/8 tsp Black pepper (plus more for egg wash)
  • 1/4 tsp Garlic Powder (plus more for egg wash)
  • Heavy cream (for egg wash)

Preparation

Preheat oven to 400 degrees. Place a sheet of parchment paper on a baking sheet.  Place beaten eggs in a bowl and season with black pepper and garlic powder, add a splash of heavy cream. Place chicken tenders in egg wash. Open bag of pork rinds slightly and crush them in the bag. Place about half of the bag of crushed rinds into a ziplock bag and add the paleo flour, 1/4 teaspoon of garlic powder and 1/8 tsp black pepper and mix. Place in a dish and coat chicken. Place on baking sheet and cook for 20 minutes, flip and cook another 15 minutes. Enjoy your yummy keto chicken with your favorite keto sides.
